2 oz - Farmland 95% Fat Free Cubed Ham
1 Large - Baked Potato (cooled & chopped)
1/2 Cup - Green Bell Pepper (chopped)
1/2 Cup - Onion (chopped)
1 tsp - Minced Garlic
1 Tbsp - Extra Virgin Olive Oil
6 - Egg Whites

How Do I Make Sam's Scramble?

Here is how you make Sam's Scramble:

Heat oil over medium heat. Saute green pepper, onion and garlic for about 5 minutes. Then add ham, potato and Mrs Dash until heated through (about 2 minutes). Push mixture to the side of pan and spray cleared area with Pam, add egg whites and scramble. When eggs are almost done mix it all together. Serve hot. Makes 2 generous portions.*I like to bake a potato in the microwave the night before and put it in the fridge overnight. This makes it very easy to chop.**I sometimes top with a slice of fat free cheese, sour cream or hot sauce. ***I also like to use the Extra Spicy version of Mrs Dash - it gives it a good kick! :)Number of Servings: 2Recipe submitted by SparkPeople user SAMANGEL.
