Preheat over to 350 degrees F. Spray two 9x5 loaf pans with Pam.2. In a large bowl, combine flour, baking soda & salt. 3. In a separate bowl, cream together butter & brown sugar. 4. Stir in eggs & mashed bananas until well blended. 5. Stir banana mixture into flour mixture; add cinnamon & nutmeg; stir just to moisten. 6. Pour batter into prepared loaf pan.7. Bake in preheated over for 60-65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack. (If there aren't enough bananas, use more applesauce to make up the difference - should equal 3 cups).
