Here is how you make Colette's Banana Bread:

Blend shortening, sugar and lemon rind in a bowl until blended. Beat in eggs and banana pulp.Add flour, baking powder and saltmix well. Place batter in a greased loaf pan. (I like to sprinkle the top with cinnamon)Bake for one hour at 350 degrees. It is done when a toothpick comes out clean. My new oven does not require a full hour--so I would start testing at 50 minutes to see if it is done. You do not want to over bake the bread, then it is dry!!Serving Size:?Makes one loaf pan...
