Preheat oven to 350 degrees. Spray a 9" x 5" loaf pan with non-stick spray. Stir the wet ingredients (bananas and eggs) together in one bowl and then stir the dry ingredients together in another bowl. Slowly introduce the dry mixture to the wet, stirring all the while. Pour the batter into your pan & bake for 60 minutes (or until a toothpick can be inserted & comes out clean, without any batter sticking to it). Let cool and then dig in. A little fat free or low fat cream cheese & you'd wonder why you ever thought that dieting sucked.This bad boy is 159 calories a slice (at 12 slices a loaf), rounding up to the nearest whole number, of course.
