Makes about 18 miniature muffins.Preheat oven to 400F. Prepare muffin tins with nonstick spray.Mix dry ingredients in one bowl and set aside. Beat eggs with other wet ingredients and then combine in the bowl with the dry. Stir well, but it's not the end of the world if there are a few little chunks. I usually add chocolate and any other chunky ingredients last.Fill each mini muffin cup about 3/4ths full with batter. They don't rise a lot because it's a heavy batter.
