Here is how you make Banana Mini Loaves:

1) Preheat oven to 350, line mini loaves tin with loaf papers.2) Whisk together flour, salt, baking soda and cinnamon. Set aside.3) Cream together butter, splenda, sugar and vanilla.4) Add egg whites, in small batches, until thoroughly combined.5) Add bananas and mix until combined.6) Stir in flour mixture until just moistened.7) Fold in walnuts.8) Place approximately 1/4 C mixture into each mini loaf and bake for 20 minutes or until toothpick comes out clean.9) Cool completely.10) To freeze: Wrap cooled loaves individually in parchment or wax paper, then place in freezer bags. 11) To serve: Microwave individually wrapped loaf on high for 40 seconds ...
