1 1/2 cups whole wheat flour

1/4 cup lowfat buttermilk
2 medium bananas, mashed (about 1 cup)
1 teaspoon vanilla extract
1 teaspoon lemon flavoring
1/4 cup egg substitute

Here is how you make Banana-Lemon Muffins:

Preheat oven to 375 degrees. In a large bowl, combine flour, splenda, baking soda and salt. Set aside. In a smaller bowl combine mashed bananas, buttermilk, applesauce, egg substitute, vanilla extract and lemon flavoring stirring well to combine. Add wet ingedients to dry and stir gently to combine, do not overmix. Bake in a 6-tin muffin pan, filling cups 2/3 full. Bake 15-20 minutes or until golden brown.
