This recipe makes 12 cupcakes or 1 8X8 inch snack cake.Line muffin tin with cupcake papers (or grease tin well) or grease and flour an 8x8 baking pan.Preheat oven to 350 degrees.In a large bowl combine first five ingredients. Blend well, until bananas are smoothly incorporated.In a second bowl, combine the dry ingredients except for the nuts. Whisk the dry ingredients well.Add the dry ingredients into the wet mixture a half cup at a time. Mix just until no flour is showing, then fold in the chopped nuts. This will be a very thick batter.Scoop batter into 12 muffin papers or into 8X8 pan.Muffins bake in approximately 25 minutes, snack cake takes about 32 minutes.The cupcakes freeze well.
