Place the oats, 2 of the bananas, the cinnamon, vanilla, salt, and a splash of milk, in the food processor. Pulse until combined but chunky. Divide into 3 bowls. Place in the dehydrator (or oven, set on warm), for an hour. After the hour, remove from dehydrator and stir the oatmeal. Add a splash of milk, 3 slices of banana, a third of the walnuts, a sprinkle of cinnamon, and a drizzle of maple syrup.
