Heat oven to 350?. Coat muffin tin (12 cups) with cooking spray (I used 2 trays).Beat eggs in large bowl; add salt & pepper to taste. Add in chopped veggies & bacon bits and mix well. Pour evenly into muffin cups. Bake 15-20 minutes or until toothpick inserted into center comes out clean.
