Makes 12 muffins.1. Preheat oven to 350. Coat 12 muffin cups with nonstick spray.2. Whisk together the egg white, yogurt, oil, vanilla and maple syrup. 3. In a separate bowl, sift together the fours, sugar, salt, baking soda, and baking powder. Stir.4. Pour the wet ingredients into the dry, and fold together with a rubber spatula until moist but still slightly lumpy. Fold in the berries. 5.
