2 c wheat germ
1 c water (boiling)
between 1.5 and 3 cups sugar (I use 1.5 cups)
1 c. canola or vegetable oil
4 eggs
4 cups (1 qt) buttermilk
2.5 c. whole wheat flour
2.5 c. all purpose flour
3 tbsp baking soda
1 tbsp salt
4 c. Bran Flakes
2 c. raisins (or 1c raisins and 1c craisins)

How Do I Make Bucket Bran Muffins?

Here is how you make Bucket Bran Muffins:

Preheat over to 400. Soak wheat germ with 1 cup boiling water and set aside. Cream sugar with eggs and oil. Add buttermilk and stir. Sift together flours, baking soda and salt and add to muffin mixture. Mix until almost blended. Mix in Bran Flakes and softened wheat germ. Fold in raisins and cranberries. Add scoops of batter to muffin tins lined with paper cups. Bake for 20 minutes. Cover well and refrigerate remaining batter. Number of Servings: 48Recipe submitted by SparkPeople user MERMERBEE12.
