2 cups Kellogg's All-Bran Extra Fiber cereal
1 1/2 cups 1% milk
1 1/4 cups Gold Medal White Flour
1/4 cup sugar
1 tablespoon plus 1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
1/4 cup egg substitute
1/2 cup raisins
1/4 cup chopped walnuts (optional)

Here is how you make Cinnamon Raisin Bran Muffins:

Preheat oven to 350.Combine cereal and milk in medium bowl. Stir and set aside for 15 mintues.Combine the flour, sugar, baking powder and cinnamon in a large bowl and mix well.Add the apple butter and egg substitute to the cereal and milk that you set aside earlier and mix well. Now add your egg mixture from your medium bowl into the large bowl with your flour mixture and stir just until the dry ingredents are moistened. Fold in the raisins and if desired the walnuts.Spray muffin pan with nonstick cooking spray or place baking cup in each cup of the muffin pan. Fill each cup 3/4 full with the batter.Bake at 350 for 17 minutes or until wooden toothpick inserted in center of muffin comes out clean.Remove muffin pan from oven and allow to cool for 5 mintues before removing muffins from pan.
