Here is how you make Cocoa Muffins:

Makes 12 muffins (approx. 3 oz. each).Preheat oven to 375 degrees F. Lightly coat muffin cups with cooking spray or use cupcake paper cups. In large bowl, stir first six ingredients (dry); In another bowl, stir next four ingredients (wet) until blended. Make well in center of dry ingredients; add wet mixture, stirring only until combined. Spoon batter into muffin cups. Sprinkle the 1/8 cup of coconut over muffin batter in cups. Bake 15-20 min. or until toothpick inserted into center comes out clean. Cool on a wire rack. Sprinkle powdered sugar over tops of cooled muffins.
