Here is how you make Erin Glory Muffins:

Preheat the oven to 350 degrees.Wisk the Egg Beaters, sugars, vaniila, and applesauce in one bowl. In another, mix the oats, baking soda, baking powder, salt, cinnamon, and nutmeg in another bowl. Combine these two mixtures before adding in the carrots, pineapple, raisins, coconut and walnuts.Pour the mixtures into lined muffin tins and cook for 22-24 minutes.
