2/3 cup chopped walnuts
6 packets of Stevia powder , each equal to 2 tsp of sugar
1/2 cup of apple sauce
1 large egg, well beaten
1 tsp vanilla extract
1T flaxseed.
1/2 cup grated carrots

Here is how you make my oat healthy muffins:

preheat your oven to 425.F. Line muffin tin with paper baking cups. put 3/4 cups of oats and 1 cup of buttermilk to soak in a bowl for 30 minutes. Combine 1/2 cup whole wheat flour, 3/4 cup unbleached flour, 1 1/2 teaspoons of baking powder, 1/2 tsp of baking soda, 1/4 tsp ground cinnamon, 1/8 tsp pumpkin pie spice. 1/4 tsp salt and 2/3 cup chopped walnuts. in another bowl mix 6 packets of Stevia (=12 tsp sugar), 4 oz of apple sauce, 1 large egg and 1 tsp vanilla. mix until well blended. stir in at and flour mixture until just blended. Spoon into paper cup lined muffin tins. Bake for 15 minutes. let cool for 5 minutes and place muffins on a rack to finish cooling. makes 12 muffins,great for breakfast with a cup of coffee and maybe some fruit.Number of Servings: 12Recipe submitted by SparkPeople user SUUZZEE.
