Preheat oven to 400.Blend spinach and eggs together (I don't like chunks of spinach in my eggs so I use a blender: you could just chop the spinach finely and blend with the eggs using a whisk or fork). Dice the Canadian bacon and add to egg mixture.Lightly spray a muffin tray with cooking spray. I use silicone muffin cups and lightly grease them.Pour egg mixture evenly into 6 muffin cups. Bake for 15-20 minutes (check at 15 and then every few minutes, depending on your oven). At 20 minutes I turn off my oven but leave the egg muffins inside for another 5-8 minutes.
