Preheat your oven to 450 degrees Fahrenheit. Lightly grease a 12 cup muffin tin or a cast iron tin. If using cast iron place the muffin pan in the oven to preheat as the oven heats. Measure all dry ingredients into a mixing bowl and blend. In a second bowl measure all liquid ingredients and blend with a whisk or power mixer until well blended. Pour liquid into dry ingredients and blend until all ingredients are wet. Do not blend for too long as this will cause an elastic texture in the muffins. Fill the muffin cups to about 2/3 full and place in oven. Reduce the heat to 400 degrees Fahrenheit and bake for about 20 minutes or until golden brown.
