Baking Powder, 1 Tbsp
Baking Soda, 1/2 tsp
Salt, 1/2 tsp
sugar, I used turbinado, 1/2 cup
Carrots, raw, 1 cup, grated
Apples, fresh, 1 cup, peeled & chopped
milk, I used 8th Continent Original Soy Milk, 1/2 cup
Egg, fresh, 2 large
Crisco Pure Vegetable Oil, 1/4 cup
Vanilla Extract, 1 tsp
Pecans, 1/2 cup, chopped

Here is how you make Fiber Rich Muffins:

Preheat Oven to 400?FLine 12 muffin cups w/paper liners or grease muffin cups. (I used liners)Blend together dry ingredients.Add remaining ingredients and mix until blended with a fork.Batter will be THICK.Spoon into muffin cups. I filled them full, so used all of the batter. They don't rise all that much, so doing it that way must have been the way I was supposed to :)Bake 20-22 minutes or until golden brown.Number of Servings: 12Recipe submitted by SparkPeople user ANEWROBIN.
