Here is how you make Mandarin Orange and Almond Wheat Muffins:

Preheat oven to 375. Combine all dry ingredients in a medium mixing bowl until well mixed. Add the soy milk, vanilla extract, oranges and almonds and mix gently so as not to tear up the oranges too much, as they are very delicate. Fill each cup of a muffin pan (I use one that makes 12) almost to the top and bake for 15 minutes.
