I grew up with these pancakes. My mom used to used to sneak wheat germ into the batter and we never were the wiser. You can add up to 1/2 cup wheat germ, bran, finely chopped hazelnuts, etc. You can also use sour milk (1 tbsp vinegar per each 1 cup of milk) instead of buttermilk.

Here is how you make Mom's Oatmeal Pancakes:

Combine oatmeal and buttermilk - set aside.Sift together flour, soda, and salt. Stir into oatmeal mixture.Add beaten eggs and oil.Spray frying pan/skillet w/cooking spray and heat. Once hot enough to make a drop of water sizzle, pour batter by 1/4 cup. Turn heat down to medium/med-low. Once bubbles form on top turn and finish cooking. This batter is too thick/dense to cook on high heat like most thinner pancakes.
