I grew up with these pancakes. My mom used to used to sneak wheat germ into the batter and we never were the wiser. You can add up to 1/2 cup wheat germ, bran, finely chopped hazelnuts, etc. You can also use sour milk (1 tbsp vinegar per each 1 cup of milk) instead of buttermilk.
