2 Cups White Self raising flour
2 Cups wholemeal Self Raising flour
1/2 cup Low GI Sugar + 2 tablespoons
2 Eggs
150gm unsalted butter
1 tablespoon grated orange peel
1/2 cup freshly squeezed grapefruit [juice]
1 cup freshly squeezed orange [juice]
OR 1 cup brandy and 1/2 cup juice of your choice
375gm mixed dried fruit [homebrand]
1/4 cup mixed fruit and nuts [dried apple, dates, sultanas, apricots, peaches, almonds
1/2 cup glace cherries
1/2 cup cranberries [craisins]

Here is how you make Ezza's christmas fruitcake:

Add the four cups of *flour* together and mix. Add in the grated orange peel and melted butter. Mix with wooden spoon. Add the two eggs and mix with wooden spoon slowly. Add the mixed fruit and the mixed fruit and nuts to the bowl along with the brandy and juice/s. Add in the 1/2 cup of *Low GI sugar*. Mix batter with the wooden spoon gently. Lastly add the 1/2 cup of glace cherries and the 1/2 cup of cranberries and mix batter together. Pour cake batter into a round cake tin greased with 1 tablespoon of olive oil and bake at 150 degrees for at least 40mins or until a skewer inserted comes out clean.
