1. Shred the carrots and apples, or slice the apples into matchstick size pieces (it was quicker to pop it in the food processor to shred)2. Mix them together well in a large bowl.3. Add the dried cranberries4. In a separate bowl mix together the mayonnaise, sour cream and honey. 5. Pour over the slaw mixture and let sit at least an hour. I made this after having it in a friend's retirement community. They just told me what was in it and I guessed at the proportions. It is pretty close. Very light and different.
