3 Cups Water
1/2 pound Chourico (Portugese sausage) Mild or Spicy
1 medium Onion
2 celery stalks
1 green bell pepper
3 tsp minced garlic
4 tbsp olive oil
2 tbsp tomato paste
3 tsp ground cumin
black pepper to taste


How Do I Make Spanish Rice?

Here is how you make Spanish Rice:

Chop the following ingriedents into small pieces (onion, celery, green pepper)Chop Chourico (or any sausage) into cubes.Heat olive oil in large pot.Add chourico to oil and cook for 2 minutes, stiring frequently.Reduce heat to medium.Add onion, celery, peppers and garlic. Stir frequently for 5 minutes until vegetables are soft.Add can of stewed tomatoes and allow to simmer for 5 minutes.Add rice and water to pot and stir.Cook according to package.When rice is cooked let sit with tight lid for 5 minutes.After 5 minutes remove lid and stir.Let stand for another 10 - 15 minutes to allow liquid to evaporate.Makes 10 -12 1/4 cup servingsNumber of Servings: 10Recipe submitted by SparkPeople user JAHZARALORI.
