1 C Buckwheat Flour
1/2 C Coconut Flour

1 tsp baking powder
2 eggs
3/4 C coconut oil
3/4 C butter
1 tsp vanilla extract
2 tsp cider vinegar
1.5 C chocolate chips - chopped
1/2 C almond pieces

Here is how you make Chocolate Chip Coconut Cookies:

Mix dry ingredients in a medium bowl and set aside. In a microwave safe bowl, melt coconut oil to liquid state and mix with butter. Combine butter/oil mixture with the eggs, vanilla extrac and vinegar. Add flour to liquid mixture until completely blended. Add in chocolate chips and almonds. Roll into ball and flatten slightly to make 2-inch round cookie. Place 2-inches apart on cookie sheet.
