In a medium bowl, combine whole wheat flour, baking soda, cinnamon and salt. Set aside. 2. In a large bowl, beat together applesauce, splends, brown sugar, egg, egg white and vanilla extract. Slowly add flour mixture. Stir in oats and butterscotch chips (if you don't like butterscotch, chocolate chips may be used for about the same nutritional stats.) 3. Drop by tablespoon onto ungreased baking sheet and flatten just a bit with back of spoon. 4. Bake for about 9 to 10 minutes. Cool on baking sheet for 2 minutes before removing to wire rack to cool completely. *Tip* Because applesauce is used in place of oil or butter, these cookies are VERY moist.
