Here is how you make Coconut Fruit Bites:

1) Finely chop the walnuts.2) In a food processor, grind the chopped dates, chopped apricots, and raisins with the corn syrup. 2) In the processor, add the walnuts, and 1 cup of the coconut. Pulse to mix. 3) Place the mix in a bowl, and roll into 1 inch balls. Roll the balls into the second portion of shredded coconut. Place on a tray, and let set for about 1/2 hour, then pack into an airtight tin, between layers of Saran wrap. Stores well in the freezer.
