1 peach, chopped
1 1/2 cups frozen (thawed) or fresh raspberries or any other berry
1 tumb fresh ginger, peeled and grated
1 Tbsp orange or tangerine juice
1 Tbsp real maple syrup
zest and juice of 1/2 lime
zest of 1 orange
1 tsp vanilla or vanilla bean paste

salt and spices to taste

Here is how you make Fresh Ginger Fruit Cobler:

In a mixer or by hand, combine oatmeal, butter, sugar, vanilla, a pinch of salt, and your favorite spice or spices (I used pumpkin pie spice) until combined and crumbly. Set aside. Combine fruit, stir in ginger, maple syrup, vanilla, and citrus zests and juices. Salt and spice to taste. (Again, I used pumpkin pie spice) Spread fruit mix in 9x9 pan (or 8X8 for thicker) and top evenly with oatmeal crumble. Bake at 350 for 20 minutes.
