Here is how you make Red Beans:

I am entering this from memory, so will add the specific spices later.Saute the onion, bell pepper, and celery in the olive oil in a large sauce pan. Add the garlic, ham and sausage and saute for about 5 more minutes. Add the red beans and enough water to cover and bring to a boil. Reduce head and simmer for 2 hours, stirring occasionally. Add water if mixture becomes dry. Crush beans against side of pan until mixture is creamy but not thick. Simmer for 1 1/2 hours.
