Soak beans 8 hours or overnight. Discard water; place beans in crockpot w onion (quartered), ham hock & chili peppers. Cover with water. Heat on 'high' at least 2 hours, then reduce heat to 'low' for 3 more hours. Add molasses & vinegar & continue cooking about another hour or until beans are well-infused with the molasses & vinegar flavors. Cooking times will vary.
