Here is how you make Red Beans with Ham Hocks:

Wash and soak beans overnight. When ready to cook, drain off water and put beans in large pot with two quarts cold water. Let water heat thoroughly, then add ham hocks, herbs, and onion. Cook slowly but steadily at least 2 hours or until tender. Halfway through use a spoon or a potato masher to mash some of the beans so that the dish becomes thick.
