2 cans (15.5 oz each) pinto beans, drained, liquid reserved, 1 can left and 1 can fork mashed.

1 C dry bread crumbs

2 large eggs, lightly beaten

1 tsp each: black pepper and garlic powder

1/2 light Thousand Island dressing

1/4 C olive or canola oil

8 thin slices Swiss cheese (4 1/2 oz each)

2 C sauerkraut

Here is how you make Reuben Burgers:

Mix beans, bread crumbs, eggs, pepper and garlic in a medium bowl, adding enough bean liquid for mixture to hold together without being wet. Divide into 6 or 8 burgers and flatten. Heat oil in a large skillet over medium-high heat. Add patties and cook, turning only once, until a crisp brown rust forms on both sides, 6-8 minutes total. Top with cheese slices, lower heat and cover until cheese melts.Spread cut side of each roll with the dressing.
