This is my husband's favorite casserole and the only thing he will eat the leftovers. To make it hotter, use plobanos, anaheims, &/or jalepenos instead of bell peppers. You could also make this with ground turkey or chicken, but the nutritionaly info is for beef.

1/2 cup diced onion
1/2 cup diced bell peppers (any color)
1/2 (16 oz) can black olives, chopped
1 (16 oz) can refried beans w/ green chiles
1/4 cup enchilada sauce
2 cups cheddar cheese, shredded
9 corn tortillas

Here is how you make Cox Family Enchilada Casserole:

Brown ground beef with the diced onions and peppers. Meanwhile, spray an 8x8 square baking dish with cooking spray. Arrange 2 tortillas so they cover as much of the bottom of the dish as possible (I usually cut them in half and place the straight edges against the sides of the dish). Spread 1/3 of the refried beans on the tortillas. Sprinkle 1/3 of the meat on the refried beans, followed by 1/3 of the cheese and 1/3 of the olives. Drizzle with enchilada sauce (about a third).
