1 large onion, chopped finely
4 cloves garlic, minced or pressed
2 eggs
1/2 c. corn meal
1/2 envelope Knorr Cream of Spinach Recipe Mix
3/4 c. milk
2 Tbsp. Light Sour Cream
1 cup frozen peas
3/4 c. cheddar cheese, grated
1/2 c. bread crumbs
3 Tbsp. parmesan cheese

Here is how you make Corn Meal Squash Casserole:

In large bowl, combine squash, onion, garlic, peas, cheddar cheese, and corn meal. Mix together thoroughly. In a saucepan, combine milk sour cream and recipe mix and simmer until it begins to thicken. Pour into squash mixture and mix until it's well incorporated. Lightly grease a 9x13 pan with the olive oil. Squish the whole mixture into the pan. Sprinkle bread crumbs and parmesan over top. Cover with foil. Bake at 350˚ for 30 minutes.
