1 lb. of pasta - elbow macaroni or small shells
4 tbsp margarine or butter
1/4 cup flour
1.5 cups milk - some with fat works better
8 oz bag of baby carrots - about 3 cups chopped
8 oz shredded cheddar cheese


How Do I Make Carrot Mac and Cheese?

Here is how you make Carrot Mac and Cheese:

Bring a large pot of water to boil. Once boiling, salt the water and add the pasta. Cook according to package directions. Drain and set aside.In a medium sauce pan, heat butter until melted. Add flour and stir until bubbling. Stir for one more minute. Slowly whisk in the milk. Bring the mixture to a boil and then stir for 1 minute. Remove from heat and add cheese until melted. In a microwave safe, covered bowl, place chopped carrots and cover 1/2 way with water. Cook in the microwave for 15 minutes, stirring every 5 minutes. Once cooked, mash with a potato masher or hand held blender. Add cooked, mashed carrots to the cheese sauce.Add pasta back to the large pan and cover with the cheese sauce.
