This is my Mom's mac & cheese recipe, just scaled down with low fat cheese and turkey dogs instead of regular hot dogs. Bread Crumbs (to be sprinkled over the top of the 2 8x8 pans of macaroni)Turkey hot dogs - one per person - cooked on top of the macaroni for the last 15 minutes. Milk - 1/2 gallon (aka 8 cups) butter - 1 stick + 2 tbsp (or 10tbsp) bread crumbs - about a cup - enough to cover the tops of the 2 8x8 pans of macaroni flour - 3/4c. - thickens the white sauce you'll be making Cheese - 75% Cabot Cheddar Cheese - 16oz - grate or cube. Pasta - rotini - 1 16oz box. How Do I Make Mom's mac and cheese (MY way)?Here is how you make Mom's mac and cheese (MY way): This makes two 8x8 pans of macaroni (maybe a little extra). This recipe is good for when you're having guests or taking a meal to someone. Also good to make one now and then freeze the other pan for later on. Spray your pans with cooking spray so that the mac doesn't stick.Preheat your oven to 350 degrees.Cook your rotini according to the box directions. You can do that while making your white sauce or before (if you haven't made a white sauce before, I would recommend that you do each step individually). Drain your rotini and set aside.Warm your milk in the microwave - do not boil!While your milk is warming, Cube or Grate your Cheese.In a large pan (small stock pot - 8qt size at least), melt your butter. Once the butter has melted, add your flour. Stir with a whisk. Do NOT leave your butter/flour mixture - it burns easily! Allow your butter/flour mixture to come to a low boil (just barely bubbling). SLOWLY add your warmed milk and stir, stir, stir! Once you have added all of your milk, allow your mixture to thicken, but do not allow to boil. Stir continuously!Once the white sauce thickens, add your cheese and stir stir stir.Once all of your cheese has melted, add in your rotini.Once the rotini is coated in the white sauce, grab your ladle and start portioning it out in your 2 8x8 pans. You may have extra - that's ok, just spray a smaller dish and you can eat it for an individual meal one night! : )Sprinkle the bread crumbs over the top of your 2 8x8 pans of macaroni. You may need additional bread crumbs - depending on how much you like them. I try to cover mine so that none of the macaroni shows through. Bake at 350 for 45 minutes. Place your hot dogs on top of the macaroni and bake for 15 minutes more. Serve with a steamed veggie and you have a good home cooked meal! : )One thing to note, if you do decide to freeze one of your 8x8 pans of macaroni, it will take about 1.5 - 2 hours to cook, especially if you take it from the freezer and put it directly into the oven.
