1 1/2 Tbsp Extra Light Olive Oil (divided)
4 boneless, skinless chicken breasts
2 Tbsp thyme
Salt and Pepper as desired
1/4 Cup sliced almonds
2 Cups chicken broth
1 Tbsp butter
1/4 tsp onion powder
1/2 tsp nutmeg
1/4 Cup dry white wine
3/4 Cup golden raisins


How Do I Make Almond Raisin Chicken?

Here is how you make Almond Raisin Chicken:

Spray a pan with approximately 1 Tbsp of Extra Light Olive Oil. Season chicken breasts liberally with thyme and salt/pepper as desired. Cook for 5-6 minutes on each side over medium heat, until cooked through.Remove chicken from pan to a plate and cover with foil to keep warm. In a small pan, spray with butter flavored non-stick spray and add "toast" almond slices over low heat, stirring frequently, so they do not burn. Set aside once they are toasted.In a separate medium sauce pan, add 1 Tbsp Extra Light Olive Oil, onion powder and nutmeg. Allow to disolve, before adding 1/4 cup of white wine. Cook off, untilpan is almost dry. Add 2 Cups of chicken broth and raisins. Continue to cook 5-6 minutes or until only half of the liquid remains. Add 1 Tbsp cold butter in small pieces and whisk until butter is completely melted.Serve chicken topped with almonds and raisin sauce.
