1 C fat-free chicken broth

2 tsp cornstarch

In large skillet, warm oil over high heat. Toss chicken w/ flour, pat off. Place chicken in skillet, brown both sides. Remove and set aside.Reduce stove to low, add onion & saute until lightly browned. Stir in apples, cider, broth, salt (opt), ginger & chicken. Simmer, cover - cook 30 min. Use slotted spoon to transfer chicken, onion, apples to serving dish. Whisk cornstarch and 3 TB of pan juices, simmer 1 min while wwhisking. Pour sauce over chicken and serve. Great with rice!
