Based on 4 chicken breasts apprx 5-6oz each.

1/2 cup parmesan cheese, grated
1-15oz jar marinated artichokes, drained and squeezed dry then chopped
1/2 a 10oz box of frozen spinach, thawed and squeezed dry (whole box can be used if you prefer) and chopped
1 tbsp minced garlic (approx 2-3 cloves)
4oz light sour cream (approx 4 tbsp)
3 tbsp light mayo
1 tsp black pepper

Makes enough to evenly top 4 chicken breasts.Preheat oven to 375 degrees.In medium bowl mix together drained/squeezed artichoke hearts, parmesan cheese, light sour cream, light mayo, drained/squeezed spinach, minced garlic and pepper.Place chicken breasts in greased baking dish and cover evenly with artichoke mixture.Bake, uncovered, in preheated oven for 35 min or until chicken is done and juices run clear.Note: Be sure to completely drain both the artichokes and spinach.
