9 oz chicken breast with skin
2 chicken legs
1.5 Tablespoons olive oil
1/4 teaspoon Kosher salt
1/4 teaspoon coarse black pepper
4 red potatoes, quartered
2 Tablespoons lemon juice
1 teaspoon lemon zest
1/4 cup finely chopped parsley
1/4 cup grated parmesan cheese

Here is how you make HealthierJo's Parsley Parmesan Chicken Bake:

Preheat oven to 425. Combine 1/2 T olive oil, Kosher salt and coarse black pepper. Rub on chicken and place skin side up in baking dish. Scrub and quarter potatoes. Toss with 1/2 T olive oil and put around chicken in dish. Sprinkle with salt and pepper if desired.Drizzle 1 T lemon joice over chicken and potatoes. Bake at 425 for 15 minutes. Reduce heat to 375 and bake for an hour or until potatoes are tender and chicken is fully cooked. (Toss potatoes half-way through baking time.)In a separate bowl, combine 1/2 T olive oil, 1 T lemon juice, lemon zest, parsley, and parmesan cheese.
