1 c. Quick Cooking Pearled Barley (uncooked)
2-1/4 c. water
1/2 c. carrots, chopped
1 clove garlic, finely chopped
1 stalk celery, chopped
1/2 c. onion, chopped
1 T olive oil
6 ounces of cooked chicken, chopped or shredded


How Do I Make Chicken Barley?

Here is how you make Chicken Barley:

Heat oil in a pan and saute carrots, onion, garlic, and celery until the onion and celery are translucent but the carrots still have a little crunch. Put water in another pan and bring to a rolling boil. Add barley and bring back up to a boil. Turn down to simmer. Add sauteed ingredients and chicken to the barley and water. Cook until barley is tender and water is absorbed (about 12 minutes).
