Add chicken & brown. When chicken is almost completely done, add in carrots, broccoli, celery, onion, ginger & garlic. Stir fry for about 2-3 minutes. Add in eggplant & bean sprouts. Stir fry for another 2-3 minutes.Mix 1 cup of water with corn starch & set aside. Deglaze wok with the other cup of water. When deglazed, add in the corn starch mixture, soy sauce & cayenne pepper (if desired). Cook until sauce is desired thickness.
