Here is how you make Mixed Beans and Chicken:

Rinse beans with cold water and soak overnight (hence the long prep time). The next morning put them in a pot or crock pot that is twice as big as the volume of the beans. I used a 12 qt stock pot because my crock pot is only 4 qt. Add water or chicken stock until it is 1" deep over the beans. Add onions and chicken and turn on medium low. Let them cook until tender, which is 4 hours minimum. Don't let them get dry or they will burn. Season to taste.
