4 boneless, skinless chicken breasts
1/2 cup of flour ( or more) for dredging
1tbs dried oregano
1 tsp ground black pepper
3 tbs of I can't believe its not butter
1 medium zuchinni halfed length wise and sliced
1 medium yellow squash halfed length wise and sliced
2 plum tomatoes, chopped
1 small yellow onion, chopped
1 cup chicken broth
1 tbs fresh chopped basil
1 lemon ( Juice 1 half)


How Do I Make Summer Squashes and Chicken?

Here is how you make Summer Squashes and Chicken:

Melt 2 tbs of butter in large skillet. Combine flour,oregano and pepper in a shallow pan. Dredge chicken in flour mixture. Add to melted butter and cook over medium heat, until both sides of chicken are browned. Remove chicken from pan, set aside, keeping warm. Add remaining butter to pan and melt. Add onions and cook until transluscent. Add Zuchinni and Yellow squash. Cook until slightly tender. Add chicken back to pan. Pour in broth and add tomatoes. Simmer until chicken cooked throught and veges tender.Finish off by squeezing in juice from half the lemon and sprinkling in the basil.
