2 Garlic cloves, minced
4T margarine
3T flour
1 1/4 c milk
3/4 mayonaise
4 c cubed, cooked chicken
3 c cooked long grain rice
1 c chopped celery
1 c frozen peas
1 jar(2 oz) diced pimentos, drained
2 t lemon juice
1 t salt
1/2 t pepper
3/4 coarsely crushed Corn Flakes


How Do I Make Potluck Chicken Casserole?

Here is how you make Potluck Chicken Casserole:

In saucepan over medium heat, saute onion, garlic, mushroom and 3T margarine until tender. Stir in flour until thoroughly combined. Gradually, add milk, bring to boil. Cook and stir for 2 minutes or until thick and bubbly. Remove from heat, stir in mayonaise until smooth. Add chicken, rice, celery, peas, pimentos, lemon juice, salt and perrper. Mix Well. Spoon into ungreased 13x9 baking dish. Melt remaining margarine, toss with corn flakes.
