4 thin-cut boneless, skinless chicken breasts (about 5 oz. each)
1/2 small onion, diced
1 medium zucchini (about 8 oz.), diced
24 grape tomatoes, each cut in half
1-1/2 c. corn kernels (fresh or frozen)
1 clove garlic, minced
Flesh of 1 ripe avocado, sliced
3 T. fresh lime juice
3 T. fresh cilantro leaves

Here is how you make Ancho Chicken:

Stir together chili powder, cumin, garlic powder, 1/4 tsp. salt and cayenne pepper in small bowl. Sprinkle spice mixture on both sides of chicken, rubbing in a little with fingers.Heat 2 tsp. oil in large, nonstick skillet over medium-high heat. Once the oil shimmers, add chicken pieces; cook about 6 minutes total, turning over as needed, until lightly browned and cooked through. Remove to plate.Add remaining 2 tsp. oil to skillet. Once it is quite hot, add onion; stir to coat. Cook about 2 minutes, until softened, then add zucchini, tomatoes, corn and garlic. Cook until all vegetables are softened but still retain their shape, about 3 minutes. Season with remaining 1/4 tsp. salt.Divide vegetables among 4 plates. Top each with a piece of chicken and roughly 1/4 of the slices of avocado.
