Here is how you make Mediterranean Crockpot Chicken:

Pre-cook chicken and pepper chunks in 1 T. oil for 5 minutes. Mix chicken, peppers and all other ingredients (except couscous) in slow cooker. Cover and cook on high 4 hours, or low 7 hours or until yams/squash pieces are tender. Ladle the stew over plain couscous and garnish with extra fresh parsley. Serves 4 to 6 people.
