1 red bell pepper, cut into strips
2 tbsp lemon zest
2 cup light coconut milk
2 tbsp fish sauce
2 tbsp fresh lemon juice
1/3-2/3 cup fresh cilantro
1/2 can straw mushroom (15 oz. can)
1/2 can bamboo shoots
1/2 can baby corn, cut to pieces
2 Thai chili peppers diced ( deseed for mild/medium, add more for kick)

Heat oil in a large skillet on high. Add curry paste and heat for 30 seconds. Add chicken and cook for 3 minutes. Stir in everything but the cilantro.
