One can of Green Giant southwest style corn
Four frozen boneless skinless chicken tenders
One cup of whole grain brown rice (one bag of boil-in-bag)
One medium tomato
Chili powder, cumin, red pepper, and garlic powder to taste

Note: If you do not use the whole can of corn it will cut down on the calories and you could cook the other half of the can in the microwave and save it for later :)

Here is how you make Easy Southwest Chicken:

Cook the rice according to the package directions. Place it in the bottom of a 2 quart casserole. Add the chicken tenders, corn, and tomato (diced) and spices. Put in the oven uncovered at 375 for 45-60 mins if the chicken is frozen (I'm not sure how long if the chicken is thawed). Makes two servings.
