8 oz canned chili peppers
1 can Rotel tomatoes with chili peppers
3 cans of green chili enchilada sauce
8 six inch tortillas cut into 2" squares
1 cup sharp cheddar cheese (low-fat)

Prepare ingredients. Cube chicken and cook in an electric skillet in some oil until brown. Reduce heat and add cream cheese, rotel and chili peppers. When the cream cheese is melted add the tortilla pieces and enchilada sauce. Return temp to med. heat and cook another 10-15 minutes until bubbling. Add cheddar cheese and stir in until melted.
